Cooked grape must, called “Saba”, is the main and most important ingredient for the production of Balsamic Vinegar of Modena. Already in use at the time of the ancient Romans, it is obtained by cooking must of local grapes in open air for many hours, reduced down to a sweet and dense syrup. Appreciated especially by children, Saba is a versatile and natural sweetener, enhancing various ingredients and recipes.

Cooked grape must

  • Excellent as a natural sweetener to replace maple syrup, honey, or refined sugar;
  • Ideal on any kind of cheese, yogurt, ice cream, or desserts like crumbles, crème caramel, panna cotta, or dried pastries;
  • We recommend it on pancakes or waffles, ricotta-based cakes, and soft desserts;
  • Also perfect for lacquering or creating a sweet and sour sauce in savory pairings.

Dense, dark brown colour, with a sweet and caramelised flavour

  • AGING: This product does not undergo any aging process; thus, it is not considered an aged product, but only the result of open-air direct fire boiling for a time ranging between 4 and 5 days.
  • STORAGE: The product is stored at room temperature between 4°C and 30°C in a dry place. After opening, keep the product in the refrigerator and consume within approximately 5 days. It is recommended not to subject the product to strong temperature fluctuations or prolonged exposure to sunlight and/or storage in refrigeration cells.
  • EXPIRATION: This product has an indicative duration of 4 years.
  • DIETARY RESTRICTIONS: This product is gluten-free and contains no animal ingredients. It is made with non-genetically modified raw materials and the only allergen it contains is sulfites.
